Mandy Siu

Chef Mandy Siu has cultivated a remarkable culinary career, honing her skills in prestigious Michelin-starred establishments, including L’Atelier de Robuchon, as well as renowned five-star hotels such as The Ritz-Carlton and The Peninsula.

As the Pastry Chef at L’Envol, a French fine-dining restaurant located in The St. Regis Hong Kong, Mandy was recognized for her exceptional talent, receiving the 100 Top Tables’ Best Pastry Chef award.

In 2022, she took a bold step to Finesse Patisserie (formerly known as Finessence), and proudly opened its first physical store in 2025 in the vibrant neighborhood of Wan Chai.

Mandy is also an active ambassador for Elle & Vire Professionnel® in Hong Kong, further showcasing her commitment to excellence in the culinary arts.

The Beginning

In January 2022, Chef Mandy took a leap of faith by stepping out of her comfort zone to build her own pastry atelier to realize a goal she had since age 15.

Together with her team, we launched the brand with the release of Galette des Rois, a classic French almond cream puff pastry cake made traditionally for the month of January. 

The Galette des Rois has now become an annual special event for our team each January.
