CHEF MANDY'S INSPIRATION

Pink pomelo has always captivated me — its blush hue, juicy flesh, and lingering sweetness. Each autumn, I pair it with a bright citrus compote, layered with a light yuzu cream cheese mousse, almond sponge, and cheesecake crumbs. Creamy, citrusy, and beautifully balanced — the perfect palate cleanser.
